Plant Based Protein Pancakes (for two)


This recipe feeds two hungry souls, fluffy protein pancakes topped with peanut butter and any of your favourite berries or fruits.


(Dairy Free, Egg Free, Yeast Free, Vegan)

Time: 15-20 minutes Ingredients: Dry Bowl:

1 Cup of Plain Flour 1 Scoop Pea Protein 1 tsp Baking Soda 1 tsp Baking powder 1/2 tsp Cinnamon Wet Bowl:

1/2 Mashed Banana 1/4 Cup raw caster sugar or coconut sugar 1 Cup Dairy Free Milk (soy, almond, oat or coconut) 1 tsp Vanilla Essence

Toppings:


Vegan Butter

Peanut Butter

Fresh Berries

Banana

Cinnamon

Any other of your favourite fruits


Extras

Vegan butter or coconut oil for cooking

Method: 1. Sieve all dry ingredients into a bowl 2. In a separate bowl mash banana and add other wet bowl ingredients or mix all together in a blender 3. Add wet ingredients to dry and fold together, if the mix is too dry add more milk or add water

4. Have a non-sick pan warming on medium to low heat, use 1 tsp of vegan butter or coconut oil to grease the pan between pancake batches

5. Scoop batter into circles in the pan with enough space to not be touching each other, wait for the pancakes to bubble before flipping


Serving:

Spread with vegan butter, peanut butter and stack them up, top with your chosen fruits and sprinkle with cinnamon


Voila now feed those hungry souls!
